Effective November 2007, new foodservice establishments must have a person in charge who can demonstrate food safety knowledge. One way to demonstrate this knowledge is by becoming a certified food safety manager (by passing a department-approved exam). Existing foodservice establishments will have until November 2009 to have a manager in place that can demonstrate food safety knowledge.
